Summer Recipe: Cobb Salad Lettuce Wrap

This month, Hormel sent me some great new products to work with. 
Now that the kids are out of school and summer is on the horizon—ease into your new routine with fresh and simple meals to keep your family full and happy this season!

Forget the fast food! For a quick and wholesome snack, pack this tasty Cobb Salad Lettuce Wrap featuring HORMEL Chunk Chicken and HORMEL Real Bacon Bits.

Here is what you will need: 

Ingredients:
  • 1 head iceberg lettuce, leaves separated
  • 2 (10-ounce) cans HORMEL® Chunk Chicken, drained
  • 1 (2-ounce) jar HORMEL® Real Bacon Bits
  • 1 cup diced tomato
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup crumbled blue cheese
  • 4 hard-cooked large eggs, peeled and chopped
  • 1/2 cup ranch salad dressing

Directions:
On platter, arrange each ingredient. Fill lettuce leaves with chicken, bacon bits, tomato, cheeses and eggs. Drizzle with dressing; roll up lettuce.

We used romaine lettuce and different cheeses to fit our families tastes and dietary needs. The great thing about this recipe is there is no wrong way to make it!

My entire family LOVED these. Yes, even my kids ate the up very fast. I can't wait to make these again and maybe even add avocado this time.
