Recipe: Artichoke, Pesto, & Arugula Sandwich


This is another recipe I find myself making weekly lately. It is a version of a Centr fitness recipe, but I have changed it to fit my tastes and dietary needs. I am so obsessed! Make sure you toast your bread and season with salt and pepper to taste. Those two steps really do make all the difference. 


Ingredients: (2 servings)


-4 tsp basil pesto
-3/4 cup ricotta cheese
-4 slices sourdough toast (or gluten free)
-1/2 cup arugula
-1 organic tomato sliced
-6 artichoke hearts (drained & cut in half)
-salt & pepper to taste


Directions:

-Mix pesto and ricotta in a small bowl until combined.

-Spread one slice of bread with cheese mixture, layer arugula, tomato, and artichoke...season with salt and pepper. Top with other slice of bread.
