Easy Lunch Idea: Egg salad wraps (gluten-free)

Ingredients: (will make 8 lettuce wraps)
8 eggs
Romaine Lettuce
3 heaping teaspoons Mayo
1 1/2 teaspoon mustard
sea salt and black pepper to taste
Optional toppings
peppers
tomato
celery
avocado cucumber
onion
Directions:
Hard boil eggs, let cool. Remove shell and slice eggs up. Add mayo, mustard, salt, and pepper. Place egg salad in lettuce leafs. Add additional toppings of choice.
I used green peppers and avocado because that is what I had in my fridge! ;) Super easy and super de-lish! enjoy!

Oh, this is a great idea, substituting bread with lettuce! Me and husband (trying to get the kids in as well) are into healthy eating so this is really good for snack or picnic!
