Recipe: Banana Nut Pancakes (Gluten Free)



O-M-G you guys, I have a super yummy recipe to share with you today. These pancakes were the biggest hit in my home and as soon as I shared a photo in my IG stores, my DM box filled up with messages asking me for the recipe. So, here you go! I found a version of this recipe on the Centr app, but I altered it to fit my families dietary needs and tastes. Below is my altered recipe for gluten free banana nut pancakes. 


Ingredients (Serves 4): 

-4 Bananas
-1 cup gluten free rolled oats
-5 tbs cottage cheese
-1 tsp baking powder
-2 large eggs
-2 tsp coconut oil (or butter)
-1 cup almond milk
-4 tsp honey
-1oz raw almonds (chopped) 
- organic syrup 


Directions:  

1) Place 1/2 the bananas, all the oats, cottage cheese, baking powder, egg, and milk in a blender or ninja and blend it until smooth. 

2) Heat oil (or butter) in a non-stick skillet over medium heat. Add 1/4 cup of mixture at a time, cooking for a couple minutes on each side. Remove from pan, keep warm, and repeat with remaining mixture. Divide pancakes between serving plates. Pour a dollop of syrup between each pancake you stack. 

3) Slice the remaining banana and arrange over pancakes. Drizzle with honey and sprinkle with almonds to serve. 





These were absolutely delicious and easy to make as well. We will be making them again as my family could not get enough. The only complaint was I only made enough for 4 servings and they all wanted more! ;)
