Recipe: Gluten Free Spinach & Cheese Lasagna


 Today I wanted to share my family's favorite gluten free lasagna recipe. I made this dish last week and shared it on my IG stories. I had more DM's then ever, asking for me to pass this recipe along. You asked, and I listened! This is a version of a recipe I got on my favorite fitness app, Centr. I altered it to fit our dietary needs and tastes, so here you go! A bit of it is an eyeball game...so I added notes after the ingredients for extra help. 






Ingredients: 
-1 Bunch of organic baby spinach (trimmed & washed) 
-2 tbs butter
- 3/4 cup gluten free flour (may use a tad more or less depending on desired thickness)
-2 cups milk (I used almond milk)
-1/8 tsp ground nutmeg
-salt & pepper to taste
-9 oz. cottage cheese
-6 oz. fresh ricotta cheese
-1/4 bunch fresh basil leaves (chopped, plus extra to serve with)
-2 oz. Parmesan cheese (finely grated) 
-gluten free lasagna sheets (oven ready sheets are a great time saver)


Directions: 

-Preheat oven to 355 degrees F and grease an 8x6 inch glass baking dish. 

-Blanch spinach in a saucepan of boiling water for 30-60 seconds or until just wilted. Drain. Once cool, squeeze out as much water as you can with your hands, then transfer to a board and chop finely. 

-Heat butter in a large non-stick fry pan over low-medium heat. Once melted, add flour and cook for 1-2 minutes. Whisk in milk until smooth and cook on low for 3 minutes until thickened. Add nutmeg and season with salt & pepper. Add chopped spinach, cottage cheese, ricotta, basil, and 2/3 of the Parmesan. Mix to combine. 

-To assemble lasagna, place a ladle of spinach and cheese mixture in the base of your baking dish. Cover with lasagna sheets then continue layering with spinach mixture and lasagna sheets, finishing with a layer of spinach and remaining Parmesan cheese. 

-Cover dish with foil and bake for 20 minutes. Remove cover and bake for an additional 10 minuted until golden and cooked. 

-Serve topped with extra basil leaves.
