Recipe: GF Peanut Butter Blossoms


I shared this recipe last in 2011 when this blog was called Stilettos and Diaper Bags. The photos from that post are not great, but the recipe is one that is tried and true! These cookies are an absolute favorite at my home and I love making them each year when I make 4-7 kinds of Christmas cookies (or cookie week). ;) Here is the updated post. I hope you and your family love them as much as we do! 

INGREDIENTS

  • 1 large egg 
  • 1 cup smooth natural peanut butter 
  • 1 cup organic or raw sugar 
  • 30 chocolate Hershey's Kisses, unwrapped 


DIRECTIONS


1) Heat oven to 350 F. Line a baking sheet with parchment paper and set aside.
2) In a mixer bowl beat together the egg, peanut butter, and sugar until a dough forms.
3) Shape the dough into small balls and place 1 inch apart on the prepared baking sheet.
4) Bake for 10 minutes. Remove baking sheet from oven and immediately press a chocolate kiss in the middle of each cookie.
5) Transfer to a rack and cool. *I like to put my racks in the refrigerator for a quicker cool off process. 



This is a batch I always at least triple. They are easy to make and darn delicious to eat. Have you ever tried gluten free peanut butter blossoms? Is this a cookie you would like to try?
