Recipe: Foil Baked Fish w/ a Southwestern twist

I saw a recipe over on Designer Bags and Dirty Diapers and it inspired me to try a similar dish. I'm all about using what you have in your kitchen, so I used the concept of her foil baked fish with black beans and corn and put my spin on it. Truth be told I only had corn, black beans, and fish from that recipe but I still wanted to go for the same spicy outcome.

Ingredients:
-Fish (I used 1 tuna filet and 1 white fish filet)
-black beans
-corn
-red and green peppers
-lemon
-butter
-salsa
-sea salt
-black pepper

Directions:
Preheat oven to 450 degrees. Pat fish dry and put sea salt and black pepper on both sides to taste. Place fish in foil on top of 1 tap of butter. Layer corn, black beans, red and green peppers, 3 teaspoons salsa and 1/2 lemon squeezed on top of each fish filet.
Cook for 20 minutes.

*They both turned out great, but I liked this recipe better on the white fish. I still want to try the recipe that Natalie posted over on her page, but this is what I had in my refrigerator so I improvised! ;)

i do something similar...the "20 minute chicken" in foil. never did think to try it with fish!
