Easy Lunch Idea: Egg salad wraps (gluten-free)

Ingredients: (will make 8 lettuce wraps)
8 eggs
Romaine Lettuce
3 heaping teaspoons Mayo
1 1/2 teaspoon mustard
sea salt and black pepper to taste
Optional toppings
peppers
tomato
celery
avocado cucumber
onion
Directions:
Hard boil eggs, let cool. Remove shell and slice eggs up. Add mayo, mustard, salt, and pepper. Place egg salad in lettuce leafs. Add additional toppings of choice.
I used green peppers and avocado because that is what I had in my fridge! ;) Super easy and super de-lish! enjoy!

Recipe: Foil Baked Fish w/ a Southwestern twist

I saw a recipe over on Designer Bags and Dirty Diapers and it inspired me to try a similar dish. I'm all about using what you have in your kitchen, so I used the concept of her foil baked fish with black beans and corn and put my spin on it. Truth be told I only had corn, black beans, and fish from that recipe but I still wanted to go for the same spicy outcome.

Ingredients:
-Fish (I used 1 tuna filet and 1 white fish filet)
-black beans
-corn
-red and green peppers
-lemon
-butter
-salsa
-sea salt
-black pepper

Directions:
Preheat oven to 450 degrees. Pat fish dry and put sea salt and black pepper on both sides to taste. Place fish in foil on top of 1 tap of butter. Layer corn, black beans, red and green peppers, 3 teaspoons salsa and 1/2 lemon squeezed on top of each fish filet.
Cook for 20 minutes.

*They both turned out great, but I liked this recipe better on the white fish. I still want to try the recipe that Natalie posted over on her page, but this is what I had in my refrigerator so I improvised! ;)

WINGS Charity Fashion show

For those of you not familiar with WINGS, it stands for Women in need growing stronger. It's a wonderful organization that's mission is to "provide a continuum of integrated services in an effort to end domestic violence and homelessness one family at a time.
This past weekend I attended their 5th annual resale fashion show at the Meadows Club. It was beyond amazing!

First up, meet the show's stylist, say hello to my cousin, and get my raffle on! There were so many amazing raffle and silent auctuin items up for grab. There were also TONS of clothes, coats, bags, and jewelry for sale. Plus it's for such a great cause how can you not go a little nuts! ;)

We entered the ballroom for lunch and the fashion show soon after. I think I was most excited for the fashion show because my cousin was walking in it (she was the last to walk twice and had this amazing designer outfit on for her second walk that was up for auction. Here shoes were designed by James Sommerfeldt (Project Accessory season one). So gorgeous!

After the show I got to go backstage and get some photos of that amazing dress close up. SWOON!
ps, how gorgeous is my cousin?! I can't believe I use to babysit for the beautiful woman that stands here today! (man time flies! okay, back to this amazing outfit :)

I am kicking myself in the butt that I didn't pick up one of the furs that were there. They were real and priced between $100-$300, some crop, some medium length, and some floor length! Luckily if I change my mind I can go to one of their 3 retail shops and really get my shop on. They also accept donations so make sure if you live in the Chicago land area you check them out!
